Description
Valpolicella Ripasso Classico DOC – Corte Odorico
This typical Veronese red wine comes from a skilful blend of native red berried grapes of Valpolicella, such as Corvina, Corvinone, Rondinella and Molinara, from the lands of San Pietro in Cariano, in the southernmost slope of Valpolicella Classica, here where the soils are clayey and limestone of morainic origin, and the vines are cultivated according to tradition, with the Veronese pergola system.
The Valpolicella Ripasso Classico is born from an artisan work, from a producer who manually works his own vineyards and produces a few thousand bottles. The wine takes its name from the homonymous technique, which consists in the “ripasso”, precisely, of the Valpolicella Classico wine in the fresh Amarone skins of vinification; this causes a second fermentation to start, so as to obtain a wine with greater body and structure, and a character that is very close to the noble Amarone. The refermentation, for this Valpolicella Ripasso, lasts 10 days, and at the end it is passed in oak barrels for 12 months, where it acquires that softness and that final balance that distinguishes it.
